Mini Chocolate S’more Cakes

4 mini cakes

INGREDIENTS
3 Eggs

2 Tbs coconut oil

1 Tsp vanilla

1 Cup almond flour

1/4 Cup cacao powder

1/4 Tsp salt

1/4 Tsp baking soda

1/4 Cup coconut sugar

4-5 SMASHMALLOW Toasted Vanilla marshmallows (cut into small pieces)


DIRECTIONS
Step 1
In a small bowl add your eggs and vanilla. Let sit while you prepare the dry ingredients. (Eggs should be close to room temp.)

Step 2
In a larger bowl add almond flour, cacao powder, baking soda, salt, and coconut sugar. Whisk together – make sure to get any clumps out.

Step 3
Preheat the oven to 350 degrees.

Step 4
In a small bowl melt your coconut oil, then add to your wet mixture. Using a hand mixer, mix until fully combined.

Step 5
Next add the wet ingredients into the dry ingredients. Mix with a hand mixer until fully combined.

Step 6
Fold in your marshmallow chunks or chocolate chips. (Or both!!)

Step 7
Using a coconut oil spray or non-stick spray, lightly coat each mini cake dish.

Step 8
Add the batter into the dishes – it should yeild 4 mini cakes.

Step 9
Bake for 15 minutes at 350°.

Step 10
Remove from oven, let cool for at least 5-10 minutes, then enjoy!
